Ingredients
Method
- Bring a large pot of water to boil. Add a few pinches of salt. When the water is boiling, add the macaroni and cook until they're tender. Drain and set aside.
- In a small pot, bring the broth to a boil.
- Add the squash to the broth and cook for 5 to 7 minutes, until the cubes are tender. Drain them but remember: Keep ½ cup of the broth aside for step 5!
- Melt the butter in a frying pan. Add the chopped onions and sauté over low heat for 5 minutes.
- Using a food processor, purée the squash, onions, milk, salt and ½ cup broth (from step 3). It will become a smooth and creamy sauce.
- In a large bowl, mix the macaroni, grated cheese, spinach, and the creamy sauce. Stir well to melt the cheese. You can add a little water or milk if needed.
- Garnish with the chopped parsley and add pepper to taste.
