Squash Macaroni & Cheese

Squash Mac & Cheese

Prep Time 20 minutes
Servings: 4
Course: Main

Ingredients

  • 2 cups macaroni
  • 5 cups broth vegetable or chicken
  • 1 butternut squash peeled, de-seeded, and cubed (4-5 cups)
  • 1 onion chopped
  • 2 cups spinach chopped
  • 1/4 cup parsley chopped
  • 2/3 cup cheese grated
  • 1 tbsp butter
  • 3/4 cup milk
  • 1 tsp salt
  • pepper to taste

Method

  1. Bring a large pot of water to boil. Add a few pinches of salt. When the water is boiling, add the macaroni and cook until they're tender. Drain and set aside.
  2. In a small pot, bring the broth to a boil.
  3. Add the squash to the broth and cook for 5 to 7 minutes, until the cubes are tender. Drain them but remember: Keep ½ cup of the broth aside for step 5!
  4. Melt the butter in a frying pan. Add the chopped onions and sauté over low heat for 5 minutes.
  5. Using a food processor, purée the squash, onions, milk, salt and ½ cup broth (from step 3). It will become a smooth and creamy sauce.
  6. In a large bowl, mix the macaroni, grated cheese, spinach, and the creamy sauce. Stir well to melt the cheese. You can add a little water or milk if needed.
  7. Garnish with the chopped parsley and add pepper to taste.
